Happy National Watermelon Day! I’m pretty sure that summertime watermelon are in my top ten reasons why I love summer. They are affordable and taste amazing compared to the rest of the year. To celebrate, I thought it was time for a summer cocktail recipe – featuring watermelon!
This cocktail can also be made into a mocktail for kids, making it perfect for all families! Simply omit the alcohol and you have it made in the shade with your watermelon.
1Divide the watermelon, sugar and mint leaves between two tall glasses. Muddle them together using a muddler (or the end of a wooden spoon!). Make sure you muddle enough to get the watermelon juicy, let the sugar dissolve a bit and release the oil from the mint leaves.
2Place ½ ounces of vodka in each glass, followed by three ice cubes.
3Fill to the top with club soda, then garnish with mint if desired.
