Happy National Watermelon Day! I’m pretty sure that summertime watermelon are in my top ten reasons why I love summer. They are affordable and taste amazing compared to the rest of the year. To celebrate, I thought it was time for a summer cocktail recipe – featuring watermelon!

This cocktail can also be made into a mocktail for kids, making it perfect for all families! Simply omit the alcohol and you have it made in the shade with your watermelon.

    ½ cup chopped seedless watermelon
  • c
    2 tsp white sugar
  • c
    6 mint leaves, plus more to garnish.
  • c
    2 tbsp. lime juice
  • c
    3 ounces of vodka
  • c
    6 ice cubes
  • c
    Lime Flavoured Club Soda to top
  • Directions

      Divide the watermelon, sugar and mint leaves between two tall glasses. Muddle them together using a muddler (or the end of a wooden spoon!). Make sure you muddle enough to get the watermelon juicy,  let the sugar dissolve a bit and release the oil from the mint leaves.

      Place ½ ounces of vodka in each glass, followed by three ice cubes.

      Fill to the top with club soda, then garnish with mint if desired.
