I always find Valentine’s Day one of the most stressful holidays of the year. Is it just me or does it feel that we barely got all of the Christmas hub-bub dealt with, cleaned up and put away… and then BAM! We have another holiday to deal with. Just me? Well, in case it isn’t just me, I’ve come up with a fast yet fancy little dessert that can be made quickly. Pudding cookies are one of my secret loves, using a pudding mix makes cookies oh-so-delectably moist and chewy. Adding them into a parfait that can be made the day before with some whipped cream and strawberries? You have an adorable and delicious dessert for your Valentine!

Strawberry Pudding Cookies

    flour

    1 tsp.
    Baking soda
  • c
    1 cup
    butter, softened
  • c
    ½ cup
    packed brown sugar
  • c
    ½ cup
    white sugar
  • c
    1 pkg.
    (3.9 oz.) Strawberry Instant Pudding
  • c

    eggs
  • Parfait:

    cups fresh sliced strawberries
  • c
    1-2 cups
    of whipped cream
  • Directions

      Pre-heat your oven to 350°F.

      Combine the flour and baking soda. Beat butter and sugars in large bowl with mixer until light and fluffy. Add dry pudding mix; beat until blended. Add eggs; mix well.  Mix in flour completely.

      Using a tablespoon drop cookies onto parchment lined baking sheets.

      Bake 9-10 minutes until edges of cookies are lightly browned but the centers are still a little under done. Remove and cool on baking sheets.

      Place one crumbled cookie in the bottom of your choice of glass. Top with whipped cream, followed by strawberries. Repeat another layer, cookie, whipped cream, strawberries. Top with last layer of whipped cream, then add sprinkles. Refrigerate overnight and serve!

      You can make as many as 10-12 parfaits from the batch of cookies, just adjust the amounts of whipped cream and strawberries to fill the glasses. This yields 4 servings.

      Package up the extra cookies and freeze. You’ll have a stash in your freezer for snacks and school lunch treats!
