Pickled Asparagus – Pickles are a hot food trend right now and one of my favourite things to eat in spring is asparagus. Tender and crunchy, spring asparagus has the best texture and flavour. Why not pick it at it’s peak and save it for a rainy day, or cocktail! Asparagus is wonderful pickled and enjoyed all year round. I especially love it spicy. Savoury Greek Yogurt – We’ve had sweet yogurts with fruit and honey and they are delightful but the trend this spring takes yogurt to the savoury side.  Greek yogurt is amazing drizzled with olive oil and topped with roasted peppers and tomatoes. This spring, add in some seasonal chervil for a bright, anise flavour to take your yogurt up a notch.

Rhubarb Cobbler – Cobblers and crumbles are an old fashioned come-back. I don’t know where they were because we have always enjoyed them as a comfort food favourite, but they are on trend this year as we look for simplicity more and more often. Lovely rhubarb comes to market in late spring and early summer so set some aside with a cobbler in mind. I have a recipe for a gluten free strawberry rhubarb cobbler that anyone would enjoy.

Trends are funny and cyclical, what was old becomes new again and around and around they go. Each time we visit a concept it gets more and more polished and delish. These spring trends will remind you of times past and yet they seem shiny and new at the same time. Try them, change is good.
