4 (1 cup) servings
white or brown rice, prepared according to package instructions
shrimp, peeled and de-veined
shredded cheddar cheese
Lime juice, to taste
1Healthy bowls are all the rage lately and for good reason; they are easily customizable to your palate. However they aren’t always easy to make for a weeknight meal, so I wanted to come up with a fast, healthy and delicious rice bowl that you could whip up easily after a long day of work. You can make your own taco seasoning if you wish, but make sure to use a packaged mix for those busy days when you are running short on time
2Heat a medium skillet coated with cooking spray over medium-high heat. Add the shrimp, taco seasoning and water to the pan and sauté for 3-4 minutes or until shrimp are cooked through and the taco sauce has thickened.
3Divide the rice between four bowls. Divide all topping ingredients between the 4 bowls evenly as well. Divide shrimp and sauce evenly between the bowls and top with a drizzle of lime juice.
4Serve and enjoy!
1Time Saving Tip: Chop, slice and dice everything ahead of time and keep it in the fridge so that all you have to do is cook the rice, shrimp and taco sauce!
