Oh summertime, we wait all year long for you to arrive. Strawberries, cherries, peaches and of course, watermelon start appearing on grocery shelves and the in-season taste of these delights cannot be beat! That said, I also wait all year long to start enjoying summertime drinks on the patio, or at home on the deck. These watermelon mojitos are refreshing, zippy and utterly delicious! Try them without the rum for a kid friendly, low sugar drink or simply enjoy one yourself!

    lime, cut into eighths

    superfine white sugar OR 4 TBSP of my Mint Honey Simple Syrup (adjust to your desired sweetness)

    cubed watermelon

    white rum

    Club Soda

    mason jars or glasses of the equivalent size

      Divide the ingredients into two; combine mint, lime and sugar/honey. Using a muddler or the end of a wooden spoon, mash the mint, lime and sugar together until the mint is crushed. Stir in the rum. Add the watermelon and crush until it’s broken down to your liking. (You can puree it in a blender first if you don’t like chunks) Add ice to the top of the glass. Fill to the top with Club Soda and serve!

      I always pre-chop my watermelon and keep it in the fridge, ready to go. Not only is it handy for recipes like this, the kids can help themselves to some healthy watermelon whenever they want!
