If you’re like me, you’ve been waiting all year to dig up those fresh potatoes from your garden. We’ve had such an early planting season this year that I actually have had full sized potatoes ready to go now for a few weeks. The dilemma is, what do you do with them when you have them? There’s nothing like new potatoes, salt and some butter, but there are so many more ways to jazz up your taters.

Smash ‘em!

My recipe may be for mini loaded smashed potato bites, but you can use full sized potatoes as well. Smashed potatoes are an easy and delicious way to use potatoes.

Make Potato Salad

While there is nothing wrong with a classic potato salad, why not try a French potato salad instead? It’s lighter and fresher tasting than the picnic classic. If that doesn’t appeal, how about a spicy Creole potato salad instead?

Potato Pancakes

With or without applesauce, potato pancakes are an easy savory side dish for almost any meal.

Potato Soup

Potato soup is an easy and comforting way to use up potatoes. Soup is an excellent side dish or main entrée, whichever you prefer. My cheesy bacon potato soup is a main meal in itself but perhaps a light potato soup is what you’re looking for.

Scalloped Potatoes

Jazz up the usual side dish by making a recipe with delicious new flavours. Try an asiago & sage scalloped potato recipe or even scalloped potatoes with bacon chipotle cream for a new twist on an old classic.

Potato Galette

While it may sound fancy, a potato galette is relatively easy to make.  It’s a unique and very delicious accompaniment to your main dish.
