This is a fun recipe for February! I love a citrus muffin in the winter don’t you? White chocolate complements these quite well and they’re perfect for an afternoon snack with tea. Enjoy!
1Preheat oven to 375F. Prepare a muffin tin with liners and set aside.
2In a large bowl mix flour, sugar, baking powder, salt, grapefruit zest. Stir to incorporate. Make a well and add vanilla, vegetable oil, milk, eggs and grapefruit juice. Stir until well moistened but do not over mix. Gently fold in food colouring if desired until batter is uniform in colour. Gently fold in baking chips. Evenly distribute the batter into your muffin cups and bake for 20 min or until a toothpick comes out clean. Allow to cool 5 min before removing to a wire rack to completely cool. Store in a covered container.
1These freeze well so make them ahead of time and thaw before use as needed.
