Breakfast on the campsite is the best. Everything tastes better when you cook it outdoors! Raw eggs can be tricky to transport and store however so this recipe for camping breakfast burritos will change the way you do breakfast at the campsite. It takes a bit of prep at home before you hit the road but you’ll make up for it when it’s time to put these in front of your happy campers.

 

Ingredients:

8 eggs, scrambled

2 green peppers, sliced

2 green onions, diced

Ham or cooked sausage, diced

½ cup shredded cheese

1 cup shredded hashbrown potatoes

1 tbsp olive oil

Salt and pepper to taste

6 large flour tortillas

6 zipper bags

Aluminum foil

 

Garnish of salsa, sour cream or whatever you like!

 

Method:

In a skillet, sauté your peppers and onions until soft. Add scrambled eggs and cook until done. Portion eggs, meat, cheese and potatoes into zipper bags and freeze. When ready to cook at the campsite you will need your bags to be thawed. If you store your camping food in a cooler they will thaw on their own. If you have a freezer in your trailer or motorhome you’ll need to transfer them to the fridge to let them thaw.

Wrap the contents of each bag in a tortilla then wrap each burrito in aluminum foil and place over the fire until warmed through. Serve with salsa and sour cream.

Tip: buy pre shredded cheese and breakfast potatoes to make assembly a breeze!
