A dinner party is the perfect excuse to add a dessert to your meal, but if you’re spending a lot of time putting together a guest-worthy entrée as well as appetizers, side dishes, and a salad, it can be hard to find the time and energy to bake a pie or cake on top of all of that. There are plenty of ways to make something sweet without spending too much time on it and few things are as simple and delicious as the combination of fruit and cream. This easy fool uses whipped cream instead of custard and has all the tastiness of a lemon-blueberry pie, just without the pastry. It all comes together in less than 15 minutes and you can play with different flavours and garnishes to suit your own taste (try adding a layer of crumbled gingersnaps for some added crunch).
1Place blueberries and sugar in a small saucepan and heat over medium, gently mashing the berries to release their juice. Continue to cook for about five minutes, until a thick syrup forms. Add lemon juice and stir. Take off heat and let cool.
2Meanwhile, add the cream and the powdered sugar to the bowl of a stand mixer and whip until peaks form. In a small bowl or cup, spoon in a layer of whipped cream, followed by 1-2 tbsp of lemon curd, another layer of whipped cream, a couple spoonsful of blueberry mixture and more whipped cream. Repeat to make four desserts. Serve immediately.
1Cook your blueberries ahead of time and refrigerate for up to three days.
