There’s still time for one last winter fruit salad before the arrival of the seasonal produce in stores and we switch over to the bounties of spring and summer. Apples and pears make for the perfect salad and the refreshing addition of lemon poppy seed dressing makes this salad feel like spring is finally here! We leave the dressing off the salad when we serve it and let everyone choose their own dressing – we have some blue cheese lovers –  but the lemon is my favourite!

    4 cups
    chopped Romain Lettuce heart (usually one heart)

    small Anjou pear, washed and sliced

    small apple, washed and sliced
  • c
    ½ cup
    roasted pecans
  • c
    ¼ cup
    dried cranberries
  • c
    ½ cup
    shredded Swiss cheese
  • Homemade Lemon Poppy Seed Dressing
  • c
    1/4 cup
    sugar (or to taste)
  • c
    1/4 cup
    lemon juice (fresh is best!)
  • c
    1/3 cup
    light olive oil
  • c
    1 tablespoon
    poppy seeds
  • c
    1 teaspoon
    very finely diced onions
  • c
    1/2 teaspoon
    Dijon mustard
  • c
    Pinch of salt
  • Directions

      Combine the salad ingredients in a large bowl.

      Combine the dressing ingredients in a mason jar with a tight-fitting lid and shake until combined.

      Pour over the salad, toss and enjoy. You can double the dressing and keep it in the closed mason jar in the fridge for up to a week.

      Add some cooked chicken breast and you can call this a full balanced meal!
