These are super quick and easy to whip up from a box of cake mix. It works surprisingly well providing the coveted chewy on the inside and crunchy around the edges cookie. There is no easier way to make a gluten free treat! You can make these at any time of year but placing cashews to look like claws makes them the perfect spooky cookie for Halloween.

    ½ cup smooth peanut butter

    Whole cashews (enough for three or four claws per cookie)

    ¼ cup milk
  • c
    ½ tsp salt
  • Directions

      Preheat oven to 350

      Add the cake mix to a large bowl and stir in all other ingredients.

      Mix until well incorporated.

      Drop dough by tablespoon onto a cookie sheet leaving a 2" space between each cookie

      With the back of a spoon, press cookies slightly to flatten the shape. Wetting the back of the spoon prevents it from sticking to the dough.

      Press 3 or 4 cashews along the outer edge of each cookie to make the claws

      Bake for approx 12 min (ovens may vary)
